NOBS Distillery is a sustainable small batch craft-distillery venture founded by the Knobelauch family. With a passion for whisky that spans many years, we have operated a small online store since 2015, catering to whisky enthusiasts and aficionados worldwide.
Immersing ourselves in the world of whisky by enjoying it with loved ones, exploring distilleries near and far, hosting tastings, and staying current with industry developments has forever enriched our lives.
Turning our dream of establishing a small sustainable whisky distillery into reality has long been a cherished aspiration. Finally, in 2019, we took the leap to pursue this passion project, and we are thrilled for the adventures that lie ahead.
Our relocation in 2018 led us to settle on the island of Samsoe nestled in the core of the Danish Empire. Samsoe's historical significance dates back to the Viking age and the early medieval period, where it thrived as a hub of trade and influence. While its political and military prominence has diminished over time, Samsoe continues to charm us with its temperate microclimate, picturesque landscapes, and sandy shores.
The island's mild microclimate and fertile soil support a flourishing agricultural sector that includes the cultivation of high-quality barley. Despite being predominantly used for export or as animal fodder, we believe that a portion of this barley could be carefully malted, fermented, and distilled into whisky.
Interestingly, centuries ago, many islanders engaged in distillation practices, producing a grain-based liquor known as “braendevin” rather than whisky. Discovering this rich history has sparked our interest in reviving this ancient tradition and perhaps crafting our own unique spirit from Samsoe's bounty.
The Isle of Samsoe already boasts a few operational distilleries, each producing excellent products, albeit not focusing on whisky production. This is where NOBS Distillery steps in, setting out to become the first distillery on Samsoe designed specifically for crafting exceptional whisky.
Our objective is clear and straightforward. We strive to create top-tier single malt and grain whiskies using locally sourced barley and grain in the most sustainable manner possible. While this vision may not be groundbreaking, it is a fundamental one shared by many new whisky distilleries.
The art of producing quality whisky is a time-honored process, one that we, as newcomers, intend to learn from and build upon. By following in the footsteps of those who have perfected the craft over centuries, we aim to establish ourselves as a straightforward distillery committed to excellence.
Whisky production consumes significant energy, and in response to the urgent global climate crisis, we are dedicated to persuing a sub-zero carbon footprint.
All the energy we utilize is sourced from renewable sources
and we are recycling energy, water and waste products wherever feasible. Our Mash & Still Room operates without artificial heating, and our brewing process strictly follows the 'Raw Ale' principles, avoiding excessive heating of the wort. We also plan to further offset our emissions by cultivating a permaculture garden on the distillery premises with a potential to sequester over four times the amount of carbon dioxide emitted by our operations annually.
By setting an example with our new micro distillery, we aim to inspire others to achieve similar goals of operating with a sub-zero carbon footprint. Success for us means paving the way for widespread adoption of sustainable practices.
Operating as a micro distillery demands precision and unwavering focus due to our limited production capacity, which leaves little room for errors or failed experiments. We have chosen to center our efforts on crafting only two distinctive products: an Isle of Islay inspired peated single malt and a sweet unpeated single grain whisky inspired by American and German distilling practices.
Our commitment to this rather singular focus is aimed at ensuring a consistent and superior quality in our offerings for the ultimate satisfaction of our future patrons.
While some may resort to methods like chill-filtering and artificial coloring to achieve consistency in quality and appearance, we stand firm in our resolve that NOBS Distillery's whiskies will never undergo such processes.
Producing exceptional whisky requires more than just enthusiasm. It demands expertise and a significant amount of time. While skills can be learned and honed, time must be dedicated and honored.
For a spirit to be classified as whisky, it must mature for a minimum of three years in wooden barrels. However, to rival the finest whiskies in the world, aging for decades may be essential.
Our goal is to have our first whisky matured and ready for bottling within five to ten years of distillation. Our method involves utilizing small, fresh oak casks and employing a variety of magical techniques. Ultimately, the whisky itself dictates when it reaches perfection. Once distilled and maturing in barrels, patience becomes the key to success.
